KBB #23 : Cheesy Fun : Lemon Cheesecake



Maafkaaannnnnnnnnnn saya telat publish, karena foto sempet nyempil entah di mana, bikin pusing nyari-nyarinya. Waktu baru pertama kali baca resepnya...alamak jantung mo copot, secara bahan-bahannya ya bow, mehitawati semua. Mascarpone dan ricotta-nya itu loh. Tapi ya dibela-belain juga, karena feeling saya, ngeliat dari komposisi bahan-bahannya, cheesecake ini bakal enak banget.

Selama proses pembuatan gak ada masalah sama sekali. Waktu liat cheesecake mulai kuning keemasan di dalam oven, rasanya seneng banget dan udah kebayang ntar bakal didandanin kayak apa buat foto-foto. Di pertengahan proses pemanggangan, bagian atas loyag saya tutup dengan aluminium foil supaya matangnya merata dan bagian atas tidak cepat gosong.

Tapi hikssss terjadi kecelakaan...lah kok ya bisa lupa matiin oven pas ninggalin cheesecake ini. Baru inget pas udah mo pulang groceries shopping, kok perasaan belum matiin oven....hiyaaaaa....lemes banget rasanya. Kebayang itu mascarpone dan ricotta mahal kebuang percuma. Selama perjalanan pulang mo nangis rasanya.

Begitu sampe rumah langsung lari ke dapur. Dan bener aja kan, belum matiin oven *nangis kejer*. Buru-buru ngeluarin cheesecake dari oven dan buka lapisan aluminium foilnya....ternyata oh ternyata...phuuiiihhhhhh..... gak item-item amat dan gak gosong-gosong amat. Pertama ketolong sama tutup alu foil, kedua karena saya set di api kecil. Padahal ditinggal selama 1 jam bow!!! Alhamdulillah gak kebuang. Dan ternyata bener banget kan, cheesecake ini enak banget. Beda rasanya dari cheesecake yang pake cheese cream. Harga emang gak bohong :D

Owiyah terjadi kesalahan juga dalam pengerjaan lapisan kacang. Karena gak teliti baca resep, kacang tidak saya spread di sekeliling loyang tapi hanya di dasar loyang aja.

Bahan-bahan :
Untuk 8-10 porsi
¼ cup port ----- (*sejenis wine - bisa diganti)
¼ cup orange juice
75g sultanas
150g mascarpone
400g ricotta
125g gula kastor
2 btr telur, pisahkan kuning dan putihnya
3 buah lemon, parut kulitnya
60g tepung terigu
80g manisan apricot, iris tipis

Crust:
30g mentega tawar
185g kacang2an, haluskan
8 sdt gula kastor
4 sdt dark brown sugar
½ sdt bubuk kayu manis
¼ sdt bubuk mixed spice

Panaskan oven 170C. Siapkan loyang ukuran 23cm, olesi dasar dan sisi2 loyang dengan mentega leleh. Alasi dasar loyang dengan baking paper, lalu olesi mentega leleh.

Panasi port, orange juice, dan sultanas di dalam panci selama 5 menit. Angkat dari api, tutup dan biarkan selama 15 menit.

Crust: panaskan mentega hingga leleh, masukkan kacang2an, semua gula dan rempah-rempah; aduk rata. Letakkan di dasar dan sisi loyang, tekan-tekan supaya padat dan melekat.

Kocok mascarpone dan ricotta hingga lembut, lalu masukkan gula, kuning telur dan parutan kulit jeruk, lalu masukkan tepung, aduk hingga rata dan lembut. Masukkan campuran sultanas-port-orange juice dan apricots.

Kocok putih telur di dalam mangkuk yang bersih dan bebas lemak hingga soft peaks. Masukkan putih telur kocok ke dalam campuran keju. Tuang ke dalam loyang, ratakan permukaannya.

Letakkan loyang ke atas loyang oven/loyang biscuit (oven tray/baking tray), panggang selama 1 jam, atau hingga permukaan cheesecake set tengah2nya dan berwarna emas kecoklatan di sekelilingnya. Matikan oven. Biarkan cheesecake di dalam oven dengan pintu dibuka sedikit selama 50-60 menit.

Keluarkan cheesecake dari oven. Gunakan pisau tumpul secara perlahan ke sekeliling cheesecake, lalu biarkan hingga betul2 dingin. Keluarkan cheesecake dari loyang dan dinginkan dalam kulkas selama 2 jam sebelum disajikan.

Tips: olesi mentega leleh ke sekeliling loyang agak tebal sehingga crust kacang akan terbalut secara merata.

Indonesian Cheese Cookies - Kaastengels

What's the most popular cookies in Indonesia during Eid Al Fitr? Yes,it's Kaastengels, Ananas Tart (Kue Nastar) and Cheese Sago Cookies (Sagu Keju). We can find these three types of cookies in every house that celebrates the day. I think Eid Al Fitr won't be the same without these delicious cookies :) *ohhh now I miss my homecountry*

Ingredients :
(this is for 2 recipes)
250 gr butter
4 egg yolks
300 gr all purpose flour
50 gr cornflour
1/2 tsp baking powder
200 gr edam/parmessan cheese

100 gr grated cheddar cheese for topping
2 egg yolks to wash the cookies

Directions:
Pre-heat the oven 170˙C
1. Beat butter and egg yolks until soft, add edam cheese, mix it well.
2. Sift all purpose flour, cornflour and baking powder over the batter. Mix until the dough not sticking to the bowl and hand.
3. Roll the dough, shape. Wash it with egg yolks then sprinkle the top with grated cheese.
4. Put it in the oven for 20 minutes.

Tiramisu Cheesecake

Sebenernya cake ini aslinya pake Mascarpone Cheese yang merupakan ciri khas tiramisu. Tapi berhubung gak ada mascarpone, gue substitute dengan cream cheese. Untuk frostingnya gue juga pake resep sendiri, krim kental dikocok sampe mengembang terus campur dengan cream cheese dan sedikit butter plus gula icing. Sengaja gue cetak jadi cupcake supaya enak makannya. Buat yang punya anak-anak, sirup kopi bisa diganti dengan coklat (pake coklat bubuk, caranya sama dengan bikin sirup kopi)

Step-nya sih keliatannya aja panjang, tapi sebenernya nggak kok. Rasanya? Recommended banget!

I. Mascarpone Cheese Cake

Bahan:
(campur dan ayak)
50 gr tepung terigu
50 gr tepung maizena
Bahan:
60 gr mentega tawar
250 gr Mascarpone cheese, biarkan pada suhu ruang
120 ml whip cream
5 kuning telur
5 putih telur
1/8 sdt garam
125 gr gula pasir halus
1 batang Vanilla, srapped ambil bagian dalamnya

Caranya:
Siapkan loyang cupcake, Pasang oven 150 derajat Celsius, masukkan alas loyang yang diisi air panas.

Campur mentega, Mascarpone cheese, whip cream, vanilla pod & batangnya dalam wadah.
Didihkan dengan api kecil, aduk hingga lembut, angkat dari api (diamkan sampai uapnya hilang).

Masukkan campuran tepung, aduk rata. Masukkan kuning telur aduk rata. Buang batang Vanilla. Sisihkan.

Kocok putih telur hingga berbusa, masukkan gula sedikit demi sedikit sambil terus dikocok sampai terbentuk kerucut-kerucut tumpul (soft peak).

Tuang 1/3 adonan putih telur ke adonan mascarpone cheese, aduk rata. Tuang campuran ini ke sisa adonan putih telur, aduk rata.

Tuang adonan ke loyang, panggang dengan cara au bain marie, kurang lebih 20-30 menit sampai permukaan matang, kuning keemasan. Keluarkan dari oven. (Cara test kue sudah matang atau belum, tusuk dengan tusuk gigi, bila adonan lengket di tusuk gigi maka kue belum sepenuhnya matang, bila sudah tidak ada yg lengket, tandanya kue sudah matang secara menyeluruh).

Setelah benar-benar dingin, lepaskan cake dari loyang, taruh di atas rak kawat hingga dingin.

II. Coffee Syrup
1 sachet bubuk kopi instan, seduh air hangat (pilih yang bau kopi-nya strong)
2 sdm Rhum (optional)
2 sdm Kahlua (optional

III. Mascarpone Frosting
1 cup heavy cream
8 ounces mascarpone cheese, room temperature
1/2 cup gula halus
Kocok cream dengan mixer hingga mengembang dan stiff peak (kaku). Di wadah lainnya, kocok mascarpone dan gula hingga halus. Kemudian campur whipped cream kedalam mascarpone hingga rata.

IV. Penyelesaian
Bila cup cake sudah dingin, berikan beberapa sendok cairan Kopi hingga cake terlihat coklat. Jangan ragu untuk memberikan kopi yang banyak hingga meresap ke dalam kue, karena ini yang akan membuat rasanya beda. Masukkan mascarpone frosting ke dalam plastik segitiga dan gunakan tip yang diinginkan lalu semprotkan ke atas masing-masing cupcake hingga habis. Taburi coklat bubuk, lalu hias dengan coklat serut. Tambahkan buah dan daun mint sebagai pemanis.

(Baking with Kids) Cheese Biscuits

Salah satu kegiatan pelepas stres dan relaksasi buat Arwen dan Leia, selain menggambar dan crafting adalah baking. Biasanya gue pilih resep-resep yang simple dan gak ribet juga anti gagal :D.

Postingan ini sebenernya untuk episode Cooking Friday, tapi berhubung videonya blm diedit, jadi resepnya dulu aja ya. Video menyusul ya.

Resep ini super duper gampil, gak perlu pake mixer pula.

Cheese Biscuits

Ingredients :
2 cups self-rising flour (gue pake all purpose flour)
1 teaspoon baking powder
1 teaspoon sugar
1/3 cup shortening
3/4 cup grated sharp Cheddar (gue pake permessan)
1 cup buttermilk (gue pake yogurt)
Salt
1/4 stick butter, melted

Directions :
Preheat oven to 350 degrees.

In a medium bowl, mix flour, baking powder, salt, to taste, and sugar together using a fork; cut in shortening until it resembles cornmeal. Add cheese. Sir in buttermilk all at one time just until blended. Do not over stir.

Drop by tablespoonfuls, or use an ice cream scoop, onto a well-greased baking sheet. Brush dough with melted butter. Bake for 12 to 15 minutes.

Cream Cheese Banana Nut Bread

Yang mau mengkaryakan cream cheese silahkan coba resep ini. Gara-gara May Irianti posting resep ini gue jadi pengen bikin. Setuju sama jeng Mae, gue juga cucok sama resep ini. Kalo mau tau teksturnya : moist, gak padet, gak seret, cenderung agak crumbly dengan wangi pisang dan samar-samar wangi cream cheese. Tadinya mau buat proyek week-end tapi looh...loohhh...loohh....pisangnya udah keburu item. Ya sutra terpaksa muter mikser :P

Cream Cheese Banana Nut Bread
Original recipe taken from myrecipes.com. Converted and modified by May Irianti.

50 gr butter
100 gr creamcheese
175 gr gula pasir
1 butir telur
180 gr tepung terigu
1/4 sdt baking powder
1/4 sdt baking soda
1/4 sdt garam
2 buah pisang matang, haluskan (gue sarankan pake pisang yg udah mateng banget biar aromanya keluar)
50 gr kacang2an, panggang sebentar (optional-gue pake kacang mete)
1/2 sdt extract vanilla
dita-kalo mau dicampur chocolate chips juga ok

Olesi loyang loaf dengan margarin, alasi dengan kertas dan olesi kembali dengan margarin. Panaskan oven hingga mencapai suhu 180 degC. Sisihkan.

Kocok butter dan cream cheese hingga lembut, tambahkan gula sedikit demi sedikit. Kocok terus hingga creamy dan fluffy. Masukkan telur, kocok pelan hanya hingga tercampur rata.

Campur tepung dan bahan kering lainnya, lalu masukkan kedalam kocokan butter+cream cheese. Kocok sebentar dengan speed rendah hingga tercampur rata. Masukkan pisang, kacang kacangan dan vanilla extract, aduk hingga rata. Adonan bertektur sangat kental mirip adonan pisang goreng.

Tuang dalam loyang, panggang selama kurang lebih 45 menit atau hingga permukaan kecoklatan. Cek dengan menggunakan tusukan sate, bila tusukannya kering setelah dimasukkan, tandanya cake sudah matang.

Keluarkan dari loyang dan dinginkan. Hias sesuai selera.

Ingredients

Mixture ‘A’
250g cream cheese, softened
60g castor sugar
1 egg
1 teaspoon vanilla

1. Beat cream cheese with sugar until light and fluffy
2. Beat in egg until well incorporated and set it aside

Mixture ‘B’
180g butter, softened
150g sugar
3 eggs
3 tbsp cocoa
120g self-raising flour
1 tsp baking powder
2 teaspoons vanilla

1. Sieve flour, baking powder and cocoa together and put aside
2. Beat butter and sugar until light and fluffy
3. Add egg, one at a time and beat until well incorporated into mixture
4. Fold flour mixture into egg mixture.
5. To assemble, pour half of mixture ‘B’, then all of mixture ‘A’, then followed by the remaining mixture ‘B’.
6. Bake in preheat oven at (350°F)180C for 45-50 min or until skewer comes out clean.

KBB # 12 : Cheese Soufflés



I never made souffle before, because some people said, it's a bit tricky to make one. So this is my first attempt. If it wasn't KBB's challenge, I don't think I want to try making it :)).

Then I made it. And you know what? Believe it or not, it wasn't as difficult as I thought! The taste was great. I added chopped spinach in it.

The thoughest part actually came up on the photo session. I have to work fast. Maaannn....souffle is easy to collapse. On the oven it rises beautifully...and DANG...5 minutes outside the oven, it collapsed!! And it become ugly. See my souffle? Not that appetizing, eh?

Ingredients/Bahan-bahan:
* 100g unsalted butter / mentega tawar
* ½ cup plain (all-purpose) flour / tepung terigu
* 300ml milk / susu
* 1 cup grated cheddar / cheddar parut
* 2 Tbs / sdM freshly grated parmesan / parmesan parut
* ½ tsp Dijon mustard / mustard Dijon
* pinch / sejumput cayenne pepper
* 4 eggs / telur, separated / pisahkan


Directions/Cara Pembuatan:
Preheat the oven to 190C (375F, Gas Mark 5). Grease and lightly flour six ½-cup-capacity souffle dishes.
Panaskan oven suhu 190C (375F, Gas Mark 5). Minyaki/olesi mentega dan taburkan tepung loyang souffle dengan kapasitas ½ cup sebanyak 6 buah.

Melt butter in a small saucepan over low heat. Add the flour and cook, stirring constantly, for 1 minute. Gradually add the milk and whisk continuously over medium heat until the mixture is smooth, thickens and comes to the boil. Allow to cool for 5 minutes.
Lelehkan mentega di panci kecil dengan api kecil. Tambahkan tepung lalu masak sambil diaduk-aduk selama 1 menit. Tambahkan susu sedikit demi sedikit dan whisk terus menerus dengan api sedang hingga adonan lembut, mengental dan mendidih. Biarkan dingin sejenak selama 5 menit.

Transfer the mixture to a bowl and stir in the cheddar, parmesan, mustard and cayenne pepper. Mix well.
Pindahkan adonan ke dalam mangkuk dan masukkan keju cheddar, parmesan, mustard dan cayenne pepper. Aduk rata.

Lightly beat the egg yolks and add these to the cheese mixture. Mix well.
Kocok ringan kuning telur dan masukkan ke dalam adonan keju. Aduk rata.

With an electric mixer, whisk the egg whites in a clean bowl until firm peaks form. Fold a quarter of the whites through the cheese mixture to slacken it slightly, then gently fold through the remaining whites.
Kocok putih telur menggunakan electric mixer hingga mencapai firm peak. Masukkan seperempat adonan putih telur ke dalam adonan keju untuk sedikit 'melemaskan' adonan, lalu masukkan sisanya perlahan.

Spoon the mixture into the prepared dishes and bake for 20-25 minutes, or until risen and golden. Don't be tempted to open the oven until the souffles have risen. Serve immediately.
Sendokkan adonan ke dalam loyang yang sudah disiapkan lalu panggang selama 20-25 menit, atau hingga mengembang naik dan kecoklatan. Jangan tergoda untuk membuka oven sebelum souffles betul-betul sudah mengembang/naik. Hidangkan segera.

Pao de Queijo

These Brazilian cheese puffs are wonderfully melt in your mouth. Savoury little snacks that are made with tapioca flour instead of wheat flour, making them good for people with an intolerance to wheat.

They are best served straight out of the oven, when they're still a bit gooey inside from the delectable cheese.

Ingredients :

* 2 cups sweet manioc starch or sour manioc starch alias tepung tapioka
* 1 cup milk
* 1/2 cup margarine (dita - I prefer butter)
* 1 teaspoon salt
* 1 1/2 cups grated parmesan cheese
* 2 eggs

Directions :
1. Preheat oven to 400 degrees F.
2. Bring the milk, salt, and margarine to a boil.
3. Remove from heat.
4. Slowly add manioc starch, stirring constantly until thoroughly mixed.
5. Add the cheese and eggs.
6. Knead until smooth.
7. Form into balls approximately 2-inches in diameter and place on a greased baking sheet.
8. Sprinkle with Parmesan cheese.
9. Bake until golden brown (dita - 15-20 minutes).
10. Eat while hot.
11. Makes 20 cheese buns.

Cooking with Love : A Tribute to Inong Haris dan Sus Gulung Vla Keju

In memoriam Inong Haris (1973-2006)

Inong Haris or Bunda Inong is truly an inspiration, eventhough she's not here anymore, she's still in our heart and has inspired so many women in Indonesia. She's also a legendary Indonesian Foodie Blogger who found Dapur Bunda (Mom's Kitchen), a kindhearted woman who never hesitate to share her family recipes, a sweet lady who has so many friends and a lovely mom who likes writing and poetry.

Cooking with Love is a new recipes book inspired by her and based on the recipes on her foodie blog. This book is her dream. And a wonderful collaboration of We R Mommies and Dapur Bunda has made her dream comes true.

Bunda Inong........The memory of you is beautifully painted in our hearts.

1 September 2006, dunia blog Indonesia dan foodie blogger Indonesia khususnya tersentak dengan berita kepergian Anna Siti Herdiyanti atau yang akrab dipanggil Bunda Inong. Gue memang tidak mengenalnya dekat. Belum pernah bertemu. Hanya sapaan-sapaan ringan di Yahoo Messenger atau sekedar bertukar pikiran di milis yang sama-sama kami ikuti, We R Mommies. Beberapa kali dapurnya menjadi sumber inspirasi gue dalam hal cooking dan baking. Beberapa kali pula almarhumah melakukan kunjungan balik ke blog gue.....*ohhhhh....tau gak rasanya kayak didatengin selebritis :D*. Sosok yang gue puja dan kagumi dalam hal masak-memasak mengunjungi seorang Dita. Itulah Inong, ramah terhadap siapa saja walaupun punya talenta luar biasa dan ngetop di kalangan blogger Indonesia.

Hampir 2 tahun berlalu sejak kepergiannya. Gue juga sempet mendengar bahwa temen-temen di We R Mommies dan Dapur Bunda sedang berencana menerbitkan sebuah buku masak yang terinspirasi dari almarhumah dan merupakan mimpinya. Gue sempet pingin terlibat tapi akhirnya mengurungkan niat karena pada saat itu, gue juga lagi ada kesibukan yang menyita waktu. Dan kayaknya buku ini mengalami perjalanan yang cukup panjang, sampai akhirnya bisa terbit sekarang ini.

Buku bertajuk "Cooking with Love" yang merupakan penghargaan tertinggi atas dedikasi almarhumah Inong Haris untuk terus berkarya dan tak segan berbagi ilmu, disusun oleh teman-teman cantik gue dari We R Mommies yang didukung berbagai pihak untuk mewujudkan impian Bunda Inong. Adalah Eva Y. Nukman, Mamiek Syamil, Sofie Dewayani, Wanda Hazman dan Wiwit Wijayanti serta konsultan boga Ena Lubis yang telah bekerja keras mewujudkan buku ini.

Buku berisi 30 resep pilihan ini terdiri dari resep-resep favorit almarhumah, resep-resep kesukaan suami dan anak-anaknya, Zidan dan Syifa serta kumpulan resep yang dipersembahkan untuk para kerabat dan sahabat tercinta. Yang menarik, buku ini keliatan benar sarat cintanya, terlihat dari selingan-selingan karya puisi dan kisah-kisah keseharian beliau bersama orang-orang terkasihnya.

Suatu ketika waktu mbak Wanda meminta bantuan gue dan Pinot untuk membuatkan video book launching dalam rangka acara launching buku ini, gue sempat terperangah. Gak mungkin gue tolak karena ini adalah sebuah kehormatan dan almarhumah Inong Haris adalah idola gue. Kapan lagi gue bisa berkarya untuk beliau, ikut serta mewujudkan impiannya (walaupun usahanya tidak besar) :). Terimakasih buat mbak Wanda dan temen-temen penyusun lain yang sudah memberikan kepercayaan ini pada kami. Semoga hasilnya gak mengecewakan ya.

Dan kemaren waktu ngerjain proyek ini, gue sempet gatel liat-liat resep yang ada di dalamnya. Banyak yang pengen gue coba dan masuk dalam daftar eksperimen. Dengan ngintip-ngintip file bukunya *hahahahaha....maaf ya mbak, gue udah ngintip-ngintip resepnya tapi belom beli bukunya*, gue gak tahan akhirnya coba praktekkin salah satu resep beliau, Sus Gulung Vla Keju, karena penampakan dan judulnya bener-bener menggiurkan. Dan gak salah memang ternyata memang sedep bener dan gak ribet pula bikinnya.



Pssttt....kalo di bukunya, resep ini ada di halaman 47 ;). Beli ya.

(KBB) # 6 : Cheese Biscuits

I'm warning you : you won't stop until your cookie jar is empty! :D

Cheese Cookies

This is Cheese Biscuits. Challenge number 6 of
KBB (Klub Berani Baking/Indonesian Baking Club, pretty similar with Daring Bakers). I made them 3 times. First ones with sesame seeds and oregano and skipped cayenne pepper, the second times I added icing sugar on top of them and for the third times I made them flatten and put walnut on top. And I like them all. They are so cheesy and tasty!

I ate some bites with a smooth soup. And it goes really really great!

Ingredients :
225g grated mature cheese
125g butter
125g flour
cayenne pepper to taste
sesame seeds

Directions :
With finger tips, mix together cheese, butter, flour and cayenne pepper until mixture forms a mass. Butter a biscuit tray. Make small balls of the dough. Roll some in sesame seeds and press on tray, placing them fairly far apart as they will spread while cooking. (We have pressed walnuts on some of the biscuits and, for a colour contrast, some chopped pistachio nuts). Bake biscuits in pre-heated oven 180C for 15 minutes. Store in an airtight container.

Tuna Parmesan Muffin

I just saw these photo sets in my flickr and remembered that I haven't posted the recipe yet. And it's been almost 2 months ;) *dear Pati, maybe you're the one who's gonna smile, you've received the recipe, right?*.

Too many photos and too little time for blogging. Sometimes I got too excited taking so many food pics and spent most of my time for photo editing or flickring. The other time, with my girls, we were busy with our art and craft project.

Home Decor Project : Bird 2

Many friends asked me how did I manage my time between parenting, baking, cooking, blogging, food photography, crafting, etc. I'm not a super mommy. When I do something, I always take my time. Otherwise never do everything such in a rush and always low my expectation. I don't need to do everything perfectly because it would be impossible. With the girls around, my hands is full and somehow I always try to put them in my first priority and involved them in my activity *Yea right! Parenting kicked my butt big-time ;)*.

Anyway, my lovely foodie blogger buddy, Mindy, posted this recipe around May. She used the recipe from Rita's.

I was interested, because I've never had savory muffins before. Those looked so tasty! I adapted her recipe and with a little re-worked, I made my Parmesan Tuna Muffin.

The original calls for curry powder but since I didn't have one, I used parmessan cheese. These muffins supposed to be tasty but they turned out salty because I put too much salt. I forgot that I used parmessan cheese which already salty :P.

Tuna Parmesan Muffin

Just try these savory muffins for another experience! Maybe you'll be quite surprised in the first bite ;). Pretty strange yet delectable.

Here's the original recipe.

Curry Tuna Muffin
from : Mindy's Deli

Ingredients:
1 can tuna in water - drained
2 cloves garlic - finely chopped
1 onion - finely chopped
1 cup self raising flour - sifted
3 tbsp curry powder (dita-I used Parmesan)
Parsley - chopped
Salt
Granulated sugar
1 egg - beaten
1/3 cup coconut milk (dita-I used milk)
1/4 cup canola oil

Topping (dita-I sprinkled the muffins with Parmesan)
Tuna mixture
Chili flakes

Directions:
Preheat the oven to 175°C. Grease muffin tin
Sauté chopped garlic and onion until fragrant. Add salt, curry powder (dita-Parmesan) and tuna chunks. Combine well. Set aside.
Combine sifted flour, salt and sugar. Make a well in the middle.
In another bowl, combine beaten egg, coconut milk (dita-Milk) and oil. Pour the mixture into a well. Stir well
Add chopped parsley and the tuna mixture. Left some for topping. Combine well.
Pour the mixture into a greased muffin tin until 3/4 full. Bake muffins 25 minutes or until set. 10 minutes before the muffins are set, put the topping on each muffin. Served warm.

Baby Cheese Cake with Toffee Plum Berries

I have some favorite cooking & baking magz, Woman's Day, CookingLight and Better Homes and Gardens. They always write interesting articles about healthy food, simple meal and great food photography of course! :D. Unfortunately, here in Kuwait I can not find the CookingLight mag. Gue suka banget resep-resep di majalah ini. Thanks to Oni yang udah mengenalkan gue ke majalah ini...fufufuuuu....I miss this mag, Ni! Biar kata ada websitenya, but still enakan baca majalahnya.

Tapi akhirnya nemu juga majalah lain yang cukup bisa memupus rasa kecewa gue, Better Homes and Gardens aka BHG. Not bad though :). Walopun memang isinya gak melulu soal cooking dan baking but I found some healthy recipes for family there, yet easy (that's the most important thing as I'm not a morning person, so I always in a hurry in the kitchen to prepare meal for my family).

Who said you don't need inspiration in the kitchen? Yayyy...Siapa sih yang gak pernah ngalamin cooking blue, males masak atau mati gaya gak tau mau masak apa? Actually there are so many ways to deal with cooking blue. I used to googling around or blogwalking or try to find cooking video/podcast (thanks to technology and thanks to all my talented blogging fellows who don't mind to share their recipes) or buy myself cooking/baking books and magazines.

Baby Cheese Cake with Plum Berries Toffee 3/3

This one is the recipe from BHG I've tried. Easy to made dessert for your family. It called Baby Cheese Cakes with Toffee Pears but since I didn't have pear in my hand, I used plums, raspberries and strawberries. Delicious as I expected. And cute of course with its mini shape :). Slip of my mind aja, bikin cheese cake tapi seukuran cupcake, udah gitu crust-nya pake oatmeal.

Recipe

Baby Cheese Cakes with Toffee Pears

Ingredients :
3/4 cup quick cooking rolled oats
1/4 cup finely chopped walnuts (gue pake oats yang uda ada campuran cincangan kacang-kacangan)
1/4 cup packed brown sugar
3 tbsp. butter, melted
1 package cream cheese, softened
1 egg
2 oz. crumble blue cheese (gue gak pake)
1/4 cup dairy sour cream
2 tbsp. butter
1/2 packed brown sugar
2 tbsp. whipping cream
4 pears, cored and sliced (gue pake plum, raspberry dan strawberry)
1/4 tsp. vanilla
1/2 cup lightly toasted broken walnuts

Directions :
1. Preheat oven to 375 F. Line eight 2 1/2-inch muffin cups with foil or paper bake cups; set aside.
2. For crust, in bowl stir together oats, 1/4 cups walnuts, 1/4 cup brown sugar and the 3 tbsp. butter untul combined Spoon 2 rounded tbsp. oat mixture into each prepared muffin cup. With bottom of a narrow glass press down lightly. Bake 8 minutes or until lightly browned. Cool slightly on wire racks. Reduce oven temperature to 325 F.
3. For cheesecake filling, in medium bowl beat cream cheese with an electric mixer on medium to high speed until smooth. Add egg and beat just until combined. Stir in blue cheese and sour cream.
4. Spoon well-rounded tbsp. of the cheese mixture into each crust-lined muffin cup. Bake 20 minutes or until slightly puffed and set. Cool 30 minutes. Remove from cups. Place on tray, cover and refrigerate at least 2 or up to 24 hours. Let stand at room temperature for 30 minutes before serving.
5. For toffee pears, in large skillet melt the 2 tbsp. butter over medium heat. Add the 1/2 cup brown sugar and cream. Cook and stir untul bubbly. Add pears. Cook, stirring occasionally, 5 minutes or until pears are tender. Remove from heat. Stir in vanilla. Cool slightly.
6. To serve, remove foil or paper liners from cheesecakes. Spoon about 1 tbsp. brown sugar-cream mixture into each of 8 dessert dishes. Top with cheesecake. Spoon pears around cheesecakes. Sprinkle each with toated walnuts.

Cake Tape Cheese Streusel



Salah satu cake favorit gue adalah cake tape. Resep yang diposting Vania ini cukup ringkes dan simpel. Jadinya so pasti YUMMY!! Toppingnya gue tambahin cheese streusel...hhmmm jadi lebih istimewa dibandingkan cuman ditaburin keju parut.



Cake Tape

Bahan :
300 gr peuyeum (tape singkong) yang tua, buang sumbunya
50 ml susu kental manis
6 kuning telur ayam dan 4 putih telur ayam (gue pake 5 telur utuh)
200 gr gula pasir halus
1/4 sdt vanili bubuk
150 gr mentega, lelehkan
100 gr keju cheddar parut
Ayak:
175 gr tepung terigu
1 sdt baking powder

Cara Membuat :

1. Siapkan loyang bundar 20 cm berlubang tengah. Semir mentega, taburi sedikit terigu.
2. Haluskan peuyeum dengan garpu, campurkan dengan susu kental manis. Aduk rata, sisihkan.
3. Kocok telur dan gula hingga gula larut dan kental (pake mixer berkecepatan tinggi).
4. Tambahkan vanili, kocok rata. Masukkan campuran peuyeum halus sedikit2 sambil kocok hingga rata.
5. Tuang mentega leleh, aduk rata.
6. Tambahkan campuran tepung terigu dan 50 gram keju cheddar, aduk rata.
7. Tuang ke dalam loyang, taburi atasnya dengan keju parut dan cheese streusel, kemudian panggang dalam oven panas bersuhu 180 C, selama 45 menit hingga matang.
8. Angkat, dinginkan. Potong-potong dan sajikan.

Cheese Streusel

Bahan :
60 gr mentega tawar
50 gr keju cheddar parut
100 gr tepung terigu protein sedang
1 sdt gula tepung

Cara Membuat :
Aduk semua bahan hingga berbutir-butir dan siap digunakan.
