Fish Kodampuli

It's been almost 4 months since I tried this recipe. Gosh....I forgot to post it here ;).

I'm always interested in Indian Culinary (I'm a spice lover) but sometimes I don't have a gut to try them. So, I'm just here waiting any Indian recipes recommendation from my friends. Thanks to Lia, who always share her Indian recipes and encourage me to try ones.

Fish Kadampuli

I think this recipe would become one of our favorite. Serve with warm rice and make you want to lick your plate ;).

Fish Kodampuli
adapted from : Lia's Home

Ingredients :
King fish - 1kg
Red chilli powder - 2.5 tbsp
Turmeric powder - 1/4 tsp
Onions, thinly sliced - 1/2 tbsp
Ginger, thinly sliced pieces - 1 tsp
Garlic, thinly sliced pieces - 1/2 tsp
Salt to taste
Fish tamarind (Kodampuli) - 2-3 pieces
Oil - 1.5 tsp

Oil - 1 tsp
Mustard seeds - 1/2 tsp
Fenugreek seeds - 1/4 tsp
Shallots thinly sliced - 1 tsp
Curry leaves to taste

Kodampuli is a special tamarind normally used in kerala style of cooking

Fish Kadampuli

Directions :
Cut the fish into pieces of desired size.

Soak the fish tamarind (kodampuli) in a cup of water and set aside.

Heat oil in a deep pan, and fry the onions until fragrant. Add ginger and garlic and saute until soft.

Mix the red chilli powder and turmeric powder with a few drops of water to make a paste. Add the spice paste to the pan and saute on low heat till the oil separates.

Add salt and kodampuli water + one more cup of water and bring to a boil.

Add fish pieces and cook on medium heat until the fish is cooked.

Heat oil in a small frying pan and add the fenugreek seeds, saute until brown. Now add the mustard seeds and when the mustard seeds start to splutter, add the shallots and curry leaves. Pour this over the prepared fish curry.

Serve with warm rice.

Chicken in Milk

Bloggers always seem to have a story to tell. There's always something to tell, to share and to write about. But today is an exception for me. I'm not feeling well and I'm not in the mood to tell a story *sorry*. My kids have been sick for 5 days and I didn't have much time for internet. To all my friends, thanks for dropping by.

When I saw this recipe, I raised my eyebrows ;). Chicken in Milk?? Never had it before, usually I cooked chicken with coconut milk or cream. I was so curious and wanted to give it a try.

And heyyyy.....who would have thought this combination would work? So easy to do. The chicken was tender and the sauce was flavourful. It's a very aromatic dish.

But I wasn't pretty satisfied because I put too much sage on it :(. The rest was good!

Chicken in Milk

Ingredients :
•1 x 1.5k/ 3½lb organic chicken (dita-I used chicken legs)
• sea salt and freshly ground black pepper
• 115g/4oz or ½ a pack of butter
• olive oil
• 1/2 cinnamon stick
• 1 good handful of fresh sage, leaves picked (dita-I used dried sage)
• zest of 2 lemons
• 10 cloves of garlic, skin left on
• 565ml/1 pint milk

Got Milk?

Directions :
Preheat the oven to 190°C/375°F/gas 5, and find a snug-fitting pot for the chicken. Season it generously all over, and fry it in the butter and a little olive oil, turning the chicken to get an even colour all over, until golden. Remove from the heat, put the chicken on a plate, and throw away the oil and butter left in the pot. This will leave you with tasty sticky goodness at the bottom of the pan which will give you a lovely caramelly flavour later on.

Put your chicken back in the pot with the rest of the ingredients, and cook in the preheated oven for 1½ hours. Baste with the cooking juice when you remember. The lemon zest will sort of split the milk, making a sauce which is absolutely fantastic.

To serve, pull the meat off the bones and divide it on to your plates. Spoon over plenty of juice and the little curds. Serve with wilted spinach or greens and some mashed potato.

Meatballs and Butter Rice

Butter Rice with Meatballs

Meatballs ini gampang banget bikinnya dan tasty, of course. Tapi ini bukan jenis meatballs-nya Indonesia aka Bakso yang kenyal-kenyal gitu ya. Meatballs ini ya emang seperti namanya, bener-bener bola-bola daging. Bisa dimakan pake spaghetti, bisa juga pake butter rice.....yum...yumm....

Butter rice-nya juga gampang banget. Nasi digoreng pake butter aja, tambahin garam, gula, merica to taste, kalo mo dikasi oregano juga enak. Atau cara lain, masak nasi di rice cooker, setelah matang beri butter kemudian aduk dan simpang di rice cooker *cepet-cepet mode on*. Pernah juga gue makan pake spaghetti yang dicampur olive oil trus ditaburin coarse salt yang udah ada campuran garlic dan italian seasoningnya.

Butter Rice with Meatballs

Meatballs

Ingredients :
1 large egg
1/4 cup water
Coarse salt and ground pepper
1 large onion, finely chopped
6 cloves garlic, minced
1/2 cup plain dried breadcrumbs
3/4 cup finely grated Parmesan cheese, plus more for serving (I only use 1/4 cup)
16 ounces ground beef (resep aslinya pake pork and turkey)

Directions :
1. In a large bowl, whisk together egg, 1/4 cup water, 1 teaspoon salt, and 1/4 teaspoon pepper. Stir in the onion and the garlic. Add breadcrumbs, cheese and beef. Mix gently. Form into 16 balls.
2. Heat 1 tablespoon oil in a large non-stick skillet over medium-high heat. Add half the meatballs; brown on all sides, 4 to 6 minutes. Transfer to a plate with a slotted spoon. Cook remaining meatballs in remaining tablespoon oil; remove meatballs.

Kecap Kikkoman
Oregano
Garam secukupnya

Cara Membuat :
1. Panaskan saucepan, masukkan butter sampai mencair kemudian beri tepung, aduk-aduk sampai rata.
2. Kemudian masukkan susu cair, aduk. Tambahkan kecap Inggris, Kikkoman dan oregano. Beri garam secukupnya.
3. Masak sampai kental, angkat dan sajikan dengan meatballs.

Untuk variasi bisa tambahkan jamur dan sayuran seperti wortel, jagung, brokoli dan buncis.

Livestrong with A Taste of Yellow - 2008

I dedicated this entry especially to my mom who have won the fight against breast cancer and to support those who still fighting. I still remembered those days how she suffered and she didn't want anybody know about her disease and saw everybody's tears. She was really struggling with her positive mind. I learn a lot about positive thinking from her. How positive mind could cure you. Yes, she definitely Livestrong with her spirit and positive mind! And have won the fight. She's a survivor. It's been almost 12 years since she won the battle. I love you, Mom and so proud of you!

My entry for Livestrong with A Taste of Yellow 2008 are : for the main dishes I made Thai Chicken Curry - Videojug is rocks! (my version : I add turmeric, substitute green beans for potatos and grilled the chicken first, and then we use to eat this dishes with noodles) and Toffeed Plums & Apples with Spiced Yoghurt for the dessert. What a spicy day! :D

How to make :
Toffeed Plums & Apples
Slice plums and apples. Melt the 30 gr butter in frying pan. Cook the fruits until browned both sides. Add 2 tablespoons light brown sugar and a pich of cinnamon, cook 5 minutes. Add 1/3 cup maple syrup, stir until heated through. Serve with spiced yoghurt.

Spiced Yoghurt
Mix together 1 cup yoghurt, 1/4 teaspoon nutmeg and 1 teaspoon caster sugar in a small bowl.

Sweet and Sour Prawns

Udang termasuk kesukaan gue. Cara pengolahannya pun bisa bermacam-macam. Dari mulai pempek udang (belum kesampean juga nih nyobain resep andalan nyokap), campuran sapo tahu, tom yam, udang balado, udang bakar, dan lain-lain. Cuman sayang gak bisa sering-sering masak udang nih, soalnya penduduk rumah ada yang gak bisa makan udang....xixixixii...peace yo Om Aji :P (setidaknya gue tak perlu menerka-nerka lagi apa reaksi laki lo, San, kalo makan udang....hueekkk!! Mangap ya kalo waktu itu masakannya agak kecampur sama udang *agak kecampur apa sengaja dicampur....huwakakakakk!!*).

Resep ini lagi-lagi dan lagi dan lagi dari Videojug. Hehehe....Gak bosen kan?

Oriental Beef with Hoisin Sauce and Garlic

Beef & Green Beans in Hoisin Sauce 4/4

Another quick and easy recipe. Udah beberapa minggu ini, gue males masak, udah gitu bangun kesiangan muluk gara-gara tidurnya kemaleman terus. Akhirnya resep-resep oriental dan Thailand jadi andalan gue. Bumbunya gak rebyek, standar garlic, ginger, minyak wijen dan kecap ikan. Paling-paling tinggal dimodif tambahin soy sauce, kecap manis, saus tomat dan hoisin sauce untuk mendapatkan variasi rasa yang beda.

Resep ini seperti biasa gue dapet dari Videojug :), aslinya cuman green beans aja tapi gue tambahin beef dan sayuran lain. Recommended buat masak cepet-cepetan (d'oohh...iyalah recommended, kalo gak, gak gue posting di sini kali!).

Hainanese Chicken Rice ala Lenny & Waz

Hainanese Chicken Rice

Belakangan ini gue lagi seneng mlototin podcast-podcast-nya Lenny & Waz. Mungkin karena gue lagi rada mati gaya di dapur dan mulai sedikit-sedikit cooking blue. Kalo mampir ke Crash Test Kitchen pasti langsung dapet ide-ide fresh buat masak. Makanya hampir semua podcast mereka, gue download-in.

Salah satunya adalah resep Nasi Ayam Hainan ala mereka. So simple and so tasty! Mereka bilang sih "One Chicken Three Ways." Maksudnya itu kuah rebusan ayam bisa buat kuah, untuk masak nasinya dan untuk bikin sambel ginger-nya (yang ini gak boleh kelewatan deh, sumpah mantebh bangethh!).

Cuman ya itu, kalo nyontek resep-resep mereka banyakan gak pake ukuran, asal cemplang cemplung aja :P. Tapi recommended banget nih resep...jauh banget dari resep yg pernah gue coba sebelumnya.



Hainanese Chicken Rice/One Chicken Three Ways

Bahan Kuah :
1 Ekor Ayam
Daun bawang, potong-potong
Jahe, potong-potong gak perlu dikupas kulitnya
Air untuk merebus
Garam
Minyak wijen

Bahan Nasi :
Beras, cuci bersih
Daun bawang, cincang
Bawang putih, cincang
Minyak untuk menumis

Bahan Sambal :
Cabe merah, potong-potong kecil
Bawang Merah, potong-potong kecil
Garlic, cincang
Ginger, kupas dan parut
Air jeruk nipis
Cuka
Gula
Garam

Bahan Saus Kecap :
Kecap Kikoman
Minyak Wijen

Chinese Cabbage

Cara Membuat :
1. Rebus ayam beserta daun bawang dan jahe, sampai mendidih dan ayam matang. Beri garam secukupnya.
2. Sementara menunggu rebusan ayam, siapkan sambal jahe. Campur semua bahan jadi satu.
3. Setelah itu siapkan beras. Tumis bawang putih dan daun bawang sampai harum, kemudian masukkan beras. Aduk sampe rata. Setelah kaldu siap, masukkan air kaldu sebagian untuk memasak nasi. Tunggu sampai tanak.
4. Beri air kaldu pada sambal.
5. Jika ayam sudah matang, angkat. Kucuri dengan air dingin untuk menghentikan proses masak. Kemudian keringkan dan baluri ayam dengan minyak wijen. Dengan cara ini kulit ayam menjadi lebih crispy.
6. Siapkan saus kecap dengan mencampur kecap kikoman dengan minyak wijen.
7. Potong-potong chinese cabbage, letakkan dalam mangkuk dan tuangi dengan air kaldu.
8. Potong-potong ayam sesuai selera.
9. Sajikan bersama nasi, sambal dan saus.

Tongseng

Tongseng

Finally I made tongseng! After browsing around finding recipes, I got this one. Another recipes were just too simple (just the mix of onion, garlic and sweet soy sauce) which made me pretty unsure about the richness of the tongseng's taste. Kurang spicy lah. Actually, the secret of making delicious tongseng is add some gulai paste. A bit ribet tapi puwasss!!

Iseng mbawain bos-nya Papin buat ngrasain tongseng and he said, "Fantastic!"

Tongseng

Tongseng Kambing

Bahan :
250 gram daging kambing, potong persegi kecil (gue pake daging mutton)
300 ml santan (gue skip)
3 sdm minyak goreng
200 gr buah kol, potong kasar
10 buah cabe rawit
8 butir bawang merah, belah 2
2 buah tomat, potong-potong
1 batang serai, memarkan
2 lembar daun salam (gue skip)
1 batang serai, memarkan
300 ml kaldu panas
2 sdm kecap manis
air jeruk nipis secukupnya-tambahan gue

Bumbu dihaluskan :
5 buah bawang merah
4 siung bawang putih
5 buah cabai merah
1 ruas jari kunyit
5 butir kemiri
1 sdm ketumbar, sangrai
1 ruas jari jahe
3 butir cengkeh
½ sdt kayu manis bubuk
merica secukupnya
garam secukupnya

Cara membuat :
1. Tumis bumbu yang halusk sampai harum. Masukkan serai dan daun salam. Aduk rata.
2. Masukkan potongan daging, aduk-aduk sampai daging matang.
3. Tuangkan santan (gue ganti air) sedikit demi sedikit sambil diaduk-aduk sampai mendidih.
4. Masukkan bawang merah, cabai rawit dan kecap manis, aduk. Tuangi kaldu panas, aduk dan biarkan mendidih dan kuah mengental.
5. Masukkan potongan kol dan tomat, aduk rata. Beri perasan jeruk nipis (tambahan gue). Angkat dan hidangkan panas-panas.

Sapo Rice with Tinola

Resep ini recommended banget. Ya cara bikinnya...ya rasanya. Thanks for sharing ya, Ncis. Sayang gak punya claypot buat Sapo (padahal ini kan ciri khasnya Sapo), jadi dicetak kayak nasi tim aja.

Nasinya gurih dan wangi trus Tinolanya juga haruuummm...nyam nyam...Bakal jadi favorite recipe nih!

Nasi Sapo

Nasi Sapo
Bahan :
5 siung bawang putih, cincang
1 genggam udang kering (ebi), rendam & cuci air panas, tiriskan
l.k. 6 kuntum jamur hioko, rendam air panas, tiriskan, iris-iris
l.k 250 gr ayam potong-potong
4 cup beras
6 cup air

Bumbu :
3 sdm kecap kikoman
1 kotak maggi blok rasa ayam
2 sdm minyak wijen alias sesame oil (ini yang bikin nasi nya wangi)
garam & merica secukupnya

Cara Membuat :
Tumis bawang putih hingga harum, masukkan udang kering, masukkan ayam & aduk sampai mati darah lalu masukkan jamur hioko yang sudah diiris-iris tipis. Masukkan beras, aduk-aduk dan bumbui. Masak di rice cooker.

Tinola

Tinola (Filipinos Garlic & Ginger Chicken Soup)
Bahan :
10 siung bawang putih, geprek, biarkan gede-gede
l.k 3 jari jahe, potong-potong
2 bh labu siem (timun duri), potong besar
1 kg ayam, potong-potong kecil
4 sdm kecap ikan (fish sauce)

Cara Membuat :
Tumis bawang putih, masukkan ayam, aduk hingga mati darah, beri kecap ikan & jahe, siram air panas, masukkan timun duri, masak hingga matang... (biarkan berkuah)

Chicken Mechbous ala Yummy

Chicken Mechbous

Akhirnya dapur gue ngepul lagi, setelah berabad-abad berdebu tak tersentuh :). Gue pernah berjanji pada diri gue, kalo gue bermukim di suatu negara, gue harus belajar masakan setempat. At least sebulan sekali ada satu resep yang gue taklukkan. Nah, di kesempatan pertama, gue nyoba bikin Chicken Mechbous. Masakan ayam ini bisa dimakan pake nasi briyani. Gampang banget bikinnya, cuman kalo di luar Middle East agak-agak susye kali ya nyari bahan-bahannya. Mungkin harus ke Indian Store untuk nyari rempah-rempahnya.


Tapi berhubung gue lagi rada males, Onion Spice Topping-nya (Hashu) langsung gue masak jadi satu dengan Tomato Sauce (Duqqus) dan Ayam yang udah digoreng, jadinya Chicken Mechbous ala Yummy :).

Chicken Mechbous

Chicken:
* 1 whole fryer*
* Salt
* 1 cinnamon stick
* 2 cardamom pods
* 2 or 3 whole cloves
* 5 black peppercorns
* Flour
* 3 cups basmati rice (or other short-grained rice)

Onion-spice topping (hashu):

* 2 large yellow onions, finely chopped
* 1 tbsp. vegetable oil
* ¼ cup golden raisins, soaked in water
* ¼ tsp. ground cardamom
* ¼ tsp. dried black lime (loomi)**, or ½ tsp. lime zest
* ¼ tsp. ground black pepper
* ½ tsp. sugar

Tomato sauce (duqqus):

* 2 large tomatoes, chopped
* 2 tbsp. water
* 2 cloves garlic, crushed
* 1 tbsp. tomato paste

Rinse chicken inside and out. Place in a stockpot with enough water to cover. Add cinnamon stick, cardamom pods, cloves, and peppercorns. Bring to a boil, and continue to boil uncovered over medium heat until chicken is done (approximately 40 minutes). Remove and drain the chicken, reserving broth.

Drain fat off the top of the broth and strain broth to remove spices. Prepare three cups of basmati rice according to package directions, using broth from chicken instead of water. Add salt if necessary.

While rice is cooking, cook onions in a nonstick skillet over medium heat, stirring frequently, until clear. Sprinkle with a little water and stir quickly until onions are brown and the water has evaporated. Stir in oil, drained raisins, and spices. Cook for one minute. Remove mixture from skillet and set aside.

Lightly dust the boiled, drained chicken with flour. In a clean skillet over medium-high heat, brown the chicken, turning frequently, until the outside is brown and crispy.

For the tomato sauce, add water, chopped tomatoes, crushed garlic, and tomato paste in a small skillet or saucepan, and sauté until tomatoes are soft and the sauce well blended.

When the rice is done, spread it on a serving platter. Sprinkle the onion-spice mixture over the rice, and place the chicken on top. Pass the tomato sauce to spoon onto individual plates.

*Chickens in Kuwait are much smaller than in the United States; two Cornish hens can be substituted for the fryer for a more “authentic” appearance.

*** Many Kuwaiti dishes call for loomi, which is dried and blackened lime, generally unavailable in the United States. Its flavor is strong and unique. Grated lime peel is suggested as a substitute for loomi in this recipe, but the taste will only approximate that of Mechbous made with loomi.

Roast Ribs



Ibu hamil pengen makan ribs? Musti diturutin nih...hehehe...Daripada makan di luar mahal, coba-coba aja bikin sendiri. Resepnya dapet dari mbak Fidia, dan yang paling gue seneng setelah diliat-liat ternyata termasuk "cemplang cemplung" cook alias gampang dan gak ribet ;).

Jadinya...ternyata oh ternyata....uenaaakkkk bambang!!! Musti coba deh! Sampe rasanya gak mau brenti ngemutin jari bekas bumbu :) Cuman sayang, gue dapet daging ribsnya yang alot (keras), makanya pas bikin kloter kedua, ribs-nya gue rebus dulu bersama bumbu-bumbu, terus diungkep lagi semalem, baru besoknya dipanggang. Dagingnya jadi empuk dan bumbunya lebih meresap lagi. Udah gitu paling enak sebenernya dimakan pake mashed potato, cuman gak sempet bikin jadinya dimakan pake crinkle cut french fries okeh juga...YUMMY pokoknya!! Udah gitu dessert-nya Very Berry Strawberry..YUM YUM YUM!!

Resep asli dapet dari mbak Fidia, tapi aku modifikasi dikit.

Ribs/Iga Panggang

Bahan :
500 gr ribs/iga
3 siung bawang putih, haluskan/cacah halus
2 sdm teriyaki marinade
2 sdm kecap asin
1 sdm kecap manis
1 sdm saus tomat
1 sdm saus sambal (optional)
1/4 sdt minyak wijen
1 sdm saus tiram
1/4 sdt lada hitam bubuk
oregano/mixed herbs secukupnya (optional)
1 sdt mentega

Pelengkap :
French Fries/Mashed potato
Sayur kukus

Cara membuat :
1. Campur semua bumbu kecuali mentega dalam sebuah wadah. Masukkan iga, campur dengan bumbu. Tutup wadah. Biarkan semalam dalam kulkas.
2. Siapkan baki panggang yang sudah dialasi aluminium foil dan oleskan sedikit mentega. Letakkan iga yang sudah diresapi bumbu dalam baki. Panggang dengan api sedang selama kurang lebih setengah jam/sampai matang.
3. Sajikan dengan pelengkap.

Asian Taste



Ayam, dagingnya sangat mudah diolah dan dimasak. Banyak variasi makanan yang menggunakan bahan dasar ayam. Resep Nasi Ayam Hainan yang gue coba ini, termasuk dalam jenis quick cook *hidup quick cook!!*. Gimana gak cepet, tinggal cemplang cemplung, tunggu mendidih sambil ongkang-ongkang kaki...hehehe...eh udah jadi!

Cocok buat dijadikan bekal ke kantor atau bekal si kecil ke sekolah....hhmmm aroma jahe yang kental berpadu dengan gurihnya ayam....YUMMY!!!



Hainanese Chicken Rice

Bahan :
30 gr jahe, memarkan
40 gr bawang putih, memarkan
20 gr gula pasir
garam secukupnya
4 potong ayam
1 btg sereh (gue tambahin sendiri)

Bahan Nasi :
1 cup beras
1 cup kaldu ayam
40 gr bawang putih, memarkan
30 gr jahe, memarkan
1 lbr daun pandan
1 btg sereh (modifikasi gue)

Saos pelengkap (modifikasi gue) :
4 sdm saos tiram
4 sdm soy sauce
3 sdm saos sambal pedas
3 sdm air
Campur semua jadi satu hingga rata

Cara Membuat :
1. Campur dan tempatkan seluruh bahan untuk membuat nasi ayam dalam rice cooker dan masak seperti Anda memasak nasi biasa.
2. Didihkan air secukupnya (cukup hingga ayam terendam) dengan jahe, bawang putih, daun sereh, gula dan garam.
3. Setelah mendidih masukkan ayam, masak hingga ayam matang.
4. Setelah matang, matikan api dan tutup pancinya biarkan 45 menit sebelum ayam dipotong-potong.
5. Sajikan bersama nasinya dan saos pelengkap.
